Ingredients

  • 2 large eggs
  • 1/4 cup canned black beans drained and rinsed
  • 1/4 cup shredded cheddar cheese
  • 1 flour tortilla medium (8-inch)
  • 1/2 teaspoon cooking oil
  • 1 pinch salt
  • 1 pinch black pepper
  • 1 pinch ground cumin optional
  • 1 tablespoon salsa Optional, for serving; or use another favorite dipping sauce
  • 1 tablespoon Fresh cilantro Optional, chopped or torn

Equipment

  • 1 Nonstick skillet For cooking eggs and crisping tortilla
  • 1 Spatula For stirring and flipping
  • 1 Small mixing bowl For whisking eggs
  • 1 Fork For whisking

Method

  1. Crack two large eggs into a small bowl. Add a pinch of salt, black pepper, and optional ground cumin, then whisk with a fork. Rinse ¼ cup of canned black beans under running water and leave them in a colander to drain thoroughly. Transfer them to a clean kitchen towel or paper towel and pat dry to remove excess moisture. Measure the cheddar and keep the tortilla ready.
  2. Heat ½ teaspoon cooking oil in a nonstick skillet over medium-low heat. Pour in the whisked eggs and stir gently and regularly with a spatula for even cooking. When the eggs are nearly set, add the well-drained black beans. Continue stirring until the eggs are fully cooked and the beans are heated through. Immediately transfer the filling to a plate to prevent further cooking in the hot skillet.
  3. Place the 8-inch flour tortilla in the same skillet over medium-low heat.
Sprinkle half the cheddar over one half of the tortilla. Add the cooked egg-and-bean filling and optional fresh cilantro, then sprinkle the remaining cheddar on top.
Fold the empty half of the tortilla over the filling. The full amount fits for a generously stuffed quesadilla, but you can reserve some filling and enjoy it separately if preferred.
  4. Cook the folded quesadilla over medium-low heat for approximately 1½–2 minutes per side, adjusting the heat as needed, until the tortilla is golden and crisp, the cheese has melted, and the filling is thoroughly hot. Transfer to a plate, let it rest briefly, and cut into two triangles. Serve warm with optional salsa or another favorite dipping sauce on the side.

Notes

Kitchen-tested tips: This breakfast quesadilla was prepared and taste-tested in a home kitchen. Cooking took approximately 8½ minutes, excluding preparation time.
For the best texture: Rinse the beans, allow them to drain thoroughly in a colander, and pat them dry before cooking. Stir the eggs gently and regularly for even cooking, then transfer the cooked filling to a plate to prevent overcooking from residual skillet heat.
Serving: All the egg-and-bean filling fitted inside one 8-inch tortilla during testing. For a lighter quesadilla, reserve some filling and enjoy it separately. Add fresh cilantro if desired, and serve with salsa or your preferred dipping sauce.
